Baked Rice Pudding

A warm comforting dessert



  1. Add rice to water and bring to a boil. Reduce heat and simmer for 25 minutes. Preheat oven 325 degrees.
  2. In a bowl, combine beaten eggs, milk, sugar, vanilla and salt. Mix well.
  3. Stir in rice and raisins. Pour into a 10 x 6 x 2 inch baking dish.
  4. Bake uncovered for 30 minutes. Stir pudding and sprinkle with nutmeg on top.
  5. Bake another 30 minutes or until knife comes out clean.
