Bill's Head Cheese

Head cheese is not a dairy cheese. It is actually a jellied meat.
Serve cold or at room temperature.



  1. Put first 3 ingredients in a pot, cover with warm water and bring to boil. Then lower heat and simmer for 1 1/2 hours.
  2. Add water to cover meat when needed. Cook to fork tender. Remove meat and keep broth.
  3. Grind meat into a large bowl. Strain broth over meat. Add salt, pepper and sage and mix well.
  4. Pour into molds and chill.
