Makes 6 servings.
- Mix cooked rice, marshmallows, pineapple, cherries, and nuts in bowl.
- Chill 2/3 cup undiluted Carnation Evaporated Milk in refrigerator tray until soft ice crystals form around edges of tray (15-20 minutes).
- Whip until stiff (1 minute). Add 2 tablespoons lemon juice; whip very stiff (2 minutes).
- Beat in confectioner's sugar. Fold in whipped Carnation into rice mixture. Spoon into serving dishes.
