Christmas Frittata

This colorful red and green frittata is perfect to serve for breakfast on Christmas morning.



  1. In a skillet, saute the onion, green pepper and garlic in butter until tender. Remove from the heat. Stir in tomatoes, set aside.
  2. In bowl, combine the remaining ingredients. Stir in vegetables.
  3. Pour into an ungreased 9 inch pie pan.
  4. Bake uncovered at 350 for 25-30 minutes or until knife comes out clean.
