This colorful red and green frittata is perfect to serve for breakfast on Christmas morning.
- In a skillet, saute the onion, green pepper and garlic in butter until tender. Remove from the heat. Stir in tomatoes, set aside.
- In bowl, combine the remaining ingredients. Stir in vegetables.
- Pour into an ungreased 9 inch pie pan.
- Bake uncovered at 350 for 25-30 minutes or until knife comes out clean.
