Dandelion Jelly

It is surprisingly delicious.



  1. Boil dandelion flowers in 1 quart of water for 3 minutes.
  2. Drain off juice, gives about 3 cups.
  3. Add Sure Jell and lemon or orange extract; bring to boil.
  4. Add sugar and boil 3 minutes.
  5. Remove from heat, skim off foam and ladle into hot jars. Seal.
