  1. Soak eggplant in salt water overnight. Steam eggplant for 30 minutes.
  2. Soak bread crumbs in milk and mix with well drained eggplant.
  3. Add eggs and seasonings mix well by hand.
  4. Put in casserole dish and top with cheese.
  5. Bake at 350 for 1 hour.
