- Peel and cut potatoes into quarters. Cook until soft. Drain, mash with salt and butter.
- Add sugar 1/3 at a time. Beat until smooth. Add vanilla. If mix is not stiff enough to roll, add more sugar.
- Roll out between sheets of wax paper to 1/8 inch. Spread with peanut butter and roll up like jelly roll.
- Chill for 1 hour then slice into 1/2 inch pieces. Let ripen a day before eating.
