Fried Catfish

A simple, but tasty fried catfish recipe



  1. Combine dry ingredients in heavy paper bag.
  2. Wash fish. While wet, shake each one in the bag.
  3. Pour oil to depth of 1 inch in heavy skillet.
  4. Heat to 370 degrees.
  5. Cook fish 2 or 3 at a time until crisp on both sides, turning once during cooking. Add more oil as needed.
  6. Keep warm in 200 oven on baking sheet lined with brown paper.
