A simple, but tasty fried catfish recipe
- Combine dry ingredients in heavy paper bag.
- Wash fish. While wet, shake each one in the bag.
- Pour oil to depth of 1 inch in heavy skillet.
- Heat to 370 degrees.
- Cook fish 2 or 3 at a time until crisp on both sides, turning once during cooking. Add more oil as needed.
- Keep warm in 200 oven on baking sheet lined with brown paper.
