Irish Tea Cake

A sifter can be used to distribute the powdered sugar evenly.

  1. Preheat oven to 350 degrees. Grease and flour a 9 inch round pan.
  2. In medium bowl, cream together the butter and sugar until light and fluffy. Beat in eggs, one at a time, then stir in vanilla.
  3. Combine the flour, baking powder and salt.
  4. Stir into the batter alternately with the milk. (If batter is too stiff, a tablespoon or two of milk may be added.)
  5. Spread the batter evenly into the prepared pan.
  6. Bake for 30 to 35 minutes in preheated oven, until toothpick inserted into the center comes out clean.
  7. Cool in pan on a wire rack, then turn out onto a serving plate.
  8. Dust with powdered sugar right before serving.
