Lime Sweet Pickles

Lime pickles are delicious, firm, sweet, and crisp.
You can add a little green food coloring to make them really green, but I prefer mine natural.



  1. Mix lime and the cold water together in a crock or plastic bucket. Add cucumbers. Soak for 24 hours. Wash in clean water. Let set 4 hours in clean water.
  2. To make syrup, mix sugar, vinegar, 1/2 cup water celery seed, salt, and pickling spice. Mix well. Bring mixture to a boil and pour over pickles. Let stand overnight.
  3. Next day bring all to a boil and simmer 30-35 minutes.
  4. Put in sterilized jars and seal. (I like to water bath my pints for 10 minutes.)
