Mexican Wedding Cookies

Store in tightly covered container at room temperature.



  1. Preheat oven to 350 degrees.
  2. Beat butter, 1/2 cup powdered sugar, and vanilla in a large bowl with electric mixer on medium speed until light and fluffy.
  3. Gradually add flour and pecans, beating on low speed after each addition until well blended.
  4. Shape dough into 1-inch balls. Place shaped dough balls 1 1/2 inches apart on an ungreased cookie sheet.
  5. Bake 14-15 minutes, or until bottoms of cookies are lightly browned. Cool for 5 minutes on baking sheets.
  6. Roll warm cookies in remaining 1/2 cup of powdered sugar until evenly coated.
  7. Place on wire racks to cool completely.
