Makes 2 (9 inch) crust pies.

  1. Sift flour, measure and add salt. Cut shortening into flour with pastry blender or two knives until it resembles coarse crumbs.
  2. Combine egg, vinegar and water, drizzle over flour mixture, mix lightly with fork until flour is moistened and all holds together in a ball.
  3. Divide into 4 parts. Roll each part on a floured board and fit into a 9 inch pan.
