"Hearty beating, hot oven and bread flour, secret of "pop" in popovers."
Makes 8 large popovers.
- Sift together flour, salt, sugar.
- Combine eggs and milk.
- Add flour mixture and beat to a smooth batter. Add 1 tablespoon melted shortening. Beat three minutes.
- Fill hot greased iron muffin cups or greased glass custard cups almost half full and bake in a hot oven 450 degrees about 25 minutes.
- Reduce heat to moderate oven 350 and bake 15 minutes longer. Serve at once.
