An easy to make rhubarb dessert with a crunchy crumb topping.
- Mix flour, oatmeal, brown sugar, and shortening. Mix until crumbly.
- Put half of crumbs in a greased 9 x 13 pan. Cover with rhubarb.
- In a saucepan, combine 1 cup sugar, cornstarch, water and vanilla. Cook until thick and pour over rhubarb.
- Cover with remaining crumbs.
- Bake at 350 degrees for 1 hour.
