Turkey Soup



  1. Break carcass into pieces, remove any stuffing.
  2. Cover with water and simmer for 2 hours. Meanwhile cook rice in salted water.
  3. Remove turkey bones.
  4. Add onion, celery, carrots. Cook till tender.
  5. Add rice and cook until boils.
  6. Season and serve with croutons or French bread.
